Slow Cooked Chicken Burrito
Ingredients
- 1 lb boneless skinless chicken breasts, chicken thighs, or a mix (454g)
- 1 (14 ½ oz can diced tomatoes (411g)
- 1 cup low-sodium chicken broth (237g)
- 2 tsp chili powder (10g)
- 2 tsp salt (10g)
- ½ tsp ground cumin (2.5g)
- 1 (15 oz) can pinto or black beans, drained, rinsed (425g)
- 1 cup uncooked white or brown rice (211g)
- 1 cup frozen corn (211g)
- sour cream, shredded cheese, avocado, chopped cilantro, or salsa for garnish
- 1 pkg tortillas
Instructions
- Mix ingredients in roaster1 lb boneless skinless chicken breasts, chicken thighs, or a mix, 1 (14 ½ oz can diced tomatoes, 1 cup low-sodium chicken broth, 2 tsp chili powder, 2 tsp salt, ½ tsp ground cumin, 1 (15 oz) can pinto or black beans, drained, rinsed, 1 cup uncooked white or brown rice, 1 cup frozen corn
