This salad adds sunshine to any meal. It’s a great dish to enjoy as an entree, side dish, or take to a potluck.

Wild Wheat Berry, Peach & Spinach Salad

Ingredients
- 1 cup wheat berries (161 g)
- 2 tbsp honey (43 g)
- 1 small garlic clove
- 1 tbsp lime juice (15 ml)
- 1 tbsp rice vinegar (15 ml)
- 2 tbsp peanut oil (30 ml)
- ½ tsp salt (2 g)
- ¼ cup raisins (38 g)
- ¼ cup peanuts (40 g) chopped
- 1 cup peaches (151 g) chopped
- 1 small red bell pepper chopped
- 1 cup fresh spinach (50 g) roughly chopped
Instructions
- Cook the wheat berries in 3.5 cups (828 ml) water for approximately 4 hrs in the Sunflair® Solar Oven.1 cup wheat berries
- Once cooked, strain, rinse, drain, and cool.
- Whisk together honey, garlic, lime juice, rice vinegar, peanut oil and salt in a large bowl.2 tbsp honey, 1 small garlic clove, 1 tbsp lime juice, 1 tbsp rice vinegar, 2 tbsp peanut oil, ½ tsp salt
